I think you are confusing the Ruby interpreter with RubyMotion. RubyMotion is a compiler, there is no GC involved.

From what I read RubyMotion can call any Objective-C library, so it probably can call SpriteKit and SceneKit (both of these are Objective-C libraries).

Sure you can! Right click on the console window bar (top) and look in Settings. You will need to increase the horizontal buffer size or something like that.
